Glad to see the mention of chess there! The game has a fearsome reputation as an obsession for intellectuals, but it is, at heart, a wonderful recreation -- and you can nail the basics in an afternoon. There are chess computers and board specifically designed for beginning beginners. Getting past the initial memorization -- which piece moves how? -- is the hardest part. After that, though, it's not long before the kids are bent over their chess sets, spinning variations in their heads, literally thinking two or three moves ahead. It's amazing to watch them flexing these brand-new mental muscles for the first time.
